Cheesy Ground Beef and Rice Casserole

Ingredients
  

  • 1 pound ground beef
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup long-grain white rice uncooked
  • 2 cups beef broth
  • 14.5 ounces (1 can) diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream

Instructions
 

  • Preheat and Prepare:
  • Preheat your oven to 350°F (175°C).
  • Cook Beef and Vegetables:
  • In a large skillet over medium heat, cook the ground beef until browned and fully cooked. Drain any excess fat.
  • Add the diced onion and minced garlic to the skillet, and cook until the onion is translucent, about 5 minutes.
  • Combine Ingredients:
  • Stir in the uncooked rice, beef broth, drained diced tomatoes, Italian seasoning, salt, and pepper.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.
  • Mix in Cheese and Sour Cream:
  • Remove the skillet from the heat and stir in 1 cup of shredded cheddar cheese and the sour cream until well combined.
  • Bake:
  • Transfer the mixture to a greased 9x13-inch baking dish. Sprinkle the remaining 1 cup of shredded cheddar cheese on top.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese on top is melted and bubbly.
  • Serve:
