Equipment

  • Large Mixing Bowl
  • Parchment-lined Baking Sheet
  • Microwave-safe Bowl

Ingredients

For the Truffles

  • 8 oz cream cheese softened
  • 1 cup pumpkin puree
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • 1 cup graham cracker crumbs
  • 1 cup white chocolate chips
  • 1 tbsp coconut oil optional for melting chocolate
  • Additional graham cracker crumbs for rolling

Instructions

  • Step 1: In a large mixing bowl, combine the softened cream cheese, pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice. Mix until smooth and well combined.
  • Step 2: Gradually add the graham cracker crumbs to the mixture, stirring until fully incorporated.
  • Step 3: Refrigerate the mixture for about 30 minutes to make it easier to handle.
  • Step 4: Once chilled, scoop out small portions of the mixture and roll them into balls (about 1 inch in diameter).
  • Step 5: Place the truffles on a parchment-lined baking sheet and refrigerate for another 30 minutes.
  • Step 6: Meanwhile, melt the white chocolate chips in a microwave-safe bowl, adding coconut oil if desired for a smoother consistency. Heat in 30-second intervals, stirring in between, until fully melted.
  • Step 7: Dip each chilled truffle into the melted white chocolate, allowing excess to drip off, and then roll in additional graham cracker crumbs if desired.
  • Step 8: Return the coated truffles to the baking sheet and refrigerate until the chocolate is set, about 15-20 minutes.
  • Step 9: Serve chilled and enjoy your delicious no-bake pumpkin cheesecake truffles!

Notes

These truffles can be stored in an airtight container in the refrigerator for up to one week. You can also freeze them for longer storage; just let them thaw in the fridge before serving. They make for a great treat to have on hand for unexpected guests!
