Ingredients
  

  • 8 oz cream cheese softened
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups graham cracker crumbs
  • 8 oz semi-sweet chocolate or chocolate chips, melted
  • 2 tbsp coconut oil optional, to thin the chocolate
  • Crushed peanuts or sprinkles for garnish optional

Instructions
 

  • Prepare the Filling: In a large mixing bowl, beat together the softened cream cheese, peanut butter, powdered sugar, and vanilla extract until smooth and creamy.
  • Add Graham Cracker Crumbs: Gradually fold in the graham cracker crumbs until fully incorporated. The mixture should be firm enough to hold its shape when rolled into balls.
  • Form the Balls: Using your hands or a small cookie scoop, form the peanut butter mixture into 1-inch balls. Place them on a baking sheet lined with parchment paper.
  • Chill the Balls: Refrigerate the peanut butter cheesecake balls for at least 30 minutes, or until firm.
  • Melt the Chocolate: In a microwave-safe bowl, melt the semi-sweet chocolate and coconut oil (if using) in 30-second intervals, stirring between each interval, until smooth.
  • Coat the Balls: Using a fork or toothpick, dip each chilled peanut butter cheesecake ball into the melted chocolate, ensuring it’s fully coated. Place the coated balls back on the parchment-lined baking sheet.
  • Garnish and Set: Before the chocolate sets, sprinkle the top of each ball with crushed peanuts or sprinkles if desired. Let the chocolate harden by refrigerating the balls for an additional 15-20 minutes.
