Ingredients

For the Crust and Topping

  • 1/2 cup granulated sugar For that sweet touch that balances the tartness of the lemons.
  • 1/2 cup unsalted butter softened, adds richness and helps create that lovely crumble texture.
  • 1/2 cup old-fashioned oats These give a nice chewiness and depth to the bars.
  • 1/4 teaspoon salt Just a pinch to enhance all the flavors.
  • 1/2 teaspoon baking powder This will help the bars rise slightly.

For the Lemon Filling

  • 1/2 cup lemon juice freshly squeezed, fresh is best for that bright, zesty flavor!
  • 1 tablespoon lemon zest A little extra flavor that makes a big difference.
  • 1/2 cup powdered sugar For sweetness in the lemon filling.

  • Step 5: In a separate bowl, whisk together the lemon juice, lemon zest, and powdered sugar until smooth.
  • Step 6: Pour the lemon mixture over the crust in the baking pan.
  • Step 7: Crumble the remaining oat mixture over the top of the lemon filling.
  • Step 8: Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
  • Step 9: Allow the bars to cool completely in the pan before cutting into squares.

Notes

To keep your lemon crumble bars fresh, store them in an airtight container at room temperature for up to 3 days. If you'd like them to last longer, you can refrigerate them for about a week. For even longer storage, they freeze beautifully!
