Ingredients
  

For the Kebab

  • 500 g ground lamb or beef This is the star of the dish, giving it that rich flavor.
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 2 tsp ground cumin This spice gives a warm, earthy flavor.
  • 1 tsp ground coriander Adds a hint of citrus that brightens the dish.
  • 1 tsp paprika For a bit of smokiness.
  • 1/2 tsp cayenne pepper optional; if you like a kick, this is for you!

For Serving

  • 4 pieces pita bread or flatbreads Perfect for wrapping up your kebabs.
  • Fresh vegetables lettuce, tomatoes, cucumbers, onions for serving
  • Yogurt or tahini sauce for serving

Instructions
 

  • Step 1: In a large bowl, combine the ground lamb or beef, chopped onion, minced garlic, ground cumin, ground coriander, paprika, cayenne pepper (if using), salt, and pepper. Mix until everything is well combined.
  • Step 2: Shape the meat mixture into a log and wrap it tightly in plastic wrap. Refrigerate for at least 2 hours, or overnight for best flavor.
  • Step 3: Preheat your oven to 180°C (350°F).
  • Step 4: Place the wrapped meat log on a baking tray and bake in the preheated oven for 30-40 minutes, or until cooked through and browned on the outside.
  • Step 5: Remove the meat from the oven and let it rest for 10 minutes before slicing thinly.
  • Step 6: Warm the pita bread or flatbreads in the oven for a few minutes.
  • Step 7: Assemble the doner kebabs by placing sliced meat in the center of the bread. Top with fresh vegetables and drizzle with yogurt or tahini sauce.
  • Step 8: Roll the bread around the filling and serve immediately.

Notes

Your homemade doner kebab can be stored in the fridge for up to 3 days. Just make sure to keep the meat and bread separate to maintain their textures. To reheat, pop the meat in the oven and warm the bread for a few seconds.
