Equipment

  • Large bowl
  • Grill

Ingredients

For the Glazed Beef Kebabs

  • 1 lb beef sirloin cut into 1-inch cubes
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp vegetable oil
  • 2 cloves garlic minced
  • 1 tsp ground ginger
  • 1/2 tsp black pepper
  • 8 small flour tortillas
  • 1 cup bell peppers cut into strips
  • 1/2 cup red onion cut into wedges
  • Fresh cilantro for garnish

Instructions

  • Step 1: In a large bowl, combine soy sauce, honey, vegetable oil, minced garlic, ground ginger, and black pepper. Mix well to create the marinade.
  • Step 2: Add the beef cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  • Step 3: Preheat your grill to medium-high heat.
  • Step 4: Thread the marinated beef, bell peppers, and red onion onto skewers, alternating between the ingredients for a colorful presentation.
  • Step 5: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the beef reaches your desired doneness.
  • Step 6: While the skewers are grilling, warm the tortillas on the grill for about 1 minute on each side until they are soft and pliable.
  • Step 7: Remove the skewers from the grill and let them rest for a few minutes.
  • Step 8: Serve the glazed beef kebabs wrapped in warm tortillas, garnished with fresh cilantro.

Notes

Leftovers? No problem! Store any uneaten kebabs in an airtight container in the refrigerator for up to 3 days. Reheat them in a skillet or the microwave when you’re ready to enjoy them again. Just be cautious not to overcook them during reheating, as that can dry them out.
