In a small bowl, combine chopped spinach, dried cranberries, and brie slices.
Stuff each chicken breast with the mixture. Secure the opening with toothpicks if necessary.
3️⃣ Season the Chicken:
Rub each chicken breast with olive oil.
Season with garlic powder, dried thyme, salt, and black pepper.
4️⃣ Sear and Bake:
Heat a large oven-safe skillet over medium-high heat.
Sear the chicken for 2-3 minutes per side, until golden brown.

Remove toothpicks if used and garnish with additional dried cranberries or fresh spinach, if desired.
