Cranberry & Spinach Stuffed Chicken Breasts with Brie

Ingredients
  

  • For the Chicken:
  • 4 boneless skinless chicken breasts 🐓
  • 1/2 cup fresh spinach chopped 🥬
  • 1/3 cup dried cranberries 🍒
  • 4 oz brie cheese sliced 🧀
  • 2 tbsp olive oil 🫒
  • 1 tsp garlic powder 🧄
  • 1/2 tsp dried thyme 🌿
  • 1/2 tsp salt 🧂
  • 1/4 tsp black pepper 🌟
  • For the Glaze:
  • 2 tbsp honey 🍯
  • 1 tbsp balsamic vinegar 🍷
  • 1/4 tsp Dijon mustard 🌟

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a baking dish or line it with parchment paper.
  • Using a sharp knife, carefully cut a pocket into the side of each chicken breast without slicing all the way through.
  • 2️⃣ Make the Filling:
  • In a small bowl, combine chopped spinach, dried cranberries, and brie slices.
  • Stuff each chicken breast with the mixture. Secure the opening with toothpicks if necessary.
  • 3️⃣ Season the Chicken:
  • Rub each chicken breast with olive oil.
  • Season with garlic powder, dried thyme, salt, and black pepper.
  • 4️⃣ Sear and Bake:
  • Heat a large oven-safe skillet over medium-high heat.
  • Sear the chicken for 2-3 minutes per side, until golden brown.
  • Transfer the skillet to the preheated oven (or place the chicken in the prepared baking dish) and bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
  • 5️⃣ Make the Glaze:
  • While the chicken is baking, whisk together honey, balsamic vinegar, and Dijon mustard in a small saucepan.
  • Heat over low heat, stirring occasionally, until slightly thickened.
  • 6️⃣ Serve:
  • Remove the chicken from the oven and drizzle with the honey-balsamic glaze.
  • Remove toothpicks if used and garnish with additional dried cranberries or fresh spinach, if desired.
