There’s something truly special about the crispy crunch of a freshly made egg roll. These cheesy shrimp egg rolls are fast, easy, and perfect for impressing friends or family!
Step 1: In a large bowl, combine the shrimp, shredded cheese, coleslaw mix, green onions, soy sauce, garlic powder, and ginger powder. Mix well until all ingredients are evenly incorporated.
Step 2: Lay an egg roll wrapper on a clean surface with one corner facing you. Place about 2 tablespoons of the shrimp mixture in the center of the wrapper.
Step 3: Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll tightly to seal. Repeat with remaining wrappers and filling.
Step 4: Heat oil in a deep pan or fryer to 350°F (175°C).
Step 5: Carefully add the egg rolls to the hot oil in batches, avoiding overcrowding. Fry for 3-4 minutes or until golden brown and crispy.
Step 6: Remove the egg rolls from the oil and drain on paper towels. Serve hot with your favorite dipping sauce.
Notes
These egg rolls can be frozen before frying. To reheat, bake them in the oven at 375°F (190°C) for about 10-12 minutes for that crispy texture again.
