Equipment

  • Large Skillet
  • Baking Dish
  • Oven

Ingredients

For the Baked Chipotle Beef Tacos

  • 1 lb ground beef
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tbsp chipotle in adobo sauce minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 12 count taco shells hard or soft
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup lettuce shredded
  • 1 cup diced tomatoes
  • 0.5 cup sour cream
  • Fresh cilantro for garnish

Instructions

  • Step 1: Preheat your oven to 375°F (190°C). This is an important step so that your tacos bake evenly!
  • Step 2: In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  • Step 3: Add the diced onion and minced garlic to the skillet with the beef. Cook until the onion is translucent, about 3-4 minutes.
  • Step 4: Stir in the chipotle in adobo sauce, ground cumin, chili powder, smoked paprika, salt, and pepper. Cook for an additional 2-3 minutes to allow flavors to meld.
  • Step 5: Arrange the taco shells in a baking dish. Spoon the beef mixture evenly into each taco shell.
  • Step 6: Top each taco with shredded cheese.
  • Step 7: Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly.
  • Step 8: Remove from the oven and let cool for a few minutes.
  • Step 9: Serve topped with shredded lettuce, diced tomatoes, sour cream, and fresh cilantro. Enjoy!

Notes

If you have leftovers (which is unlikely, but just in case!), store them in an airtight container in the fridge for up to 3 days. You can reheat them in the oven at 350°F (175°C) until warmed through.
