Ingredients

  • 1 pork tenderloin about 1.5 lbs
  • 6 slices of bacon
  • 1/4 cup brown sugar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Cooking oil

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a small bowl, mix the brown sugar, garlic powder, onion powder, paprika, salt, and pepper.
  • Rub the spice mixture all over the pork tenderloin, ensuring it's evenly coated.
  • Wrap the seasoned pork tenderloin with bacon slices, securing them with toothpicks if needed.
  • Heat a skillet over medium-high heat with a little cooking oil.
  • Sear the bacon-wrapped pork tenderloin on all sides until the bacon is slightly crispy, about 2-3 minutes per side.
  • Transfer the pork tenderloin to a baking dish and sprinkle any remaining spice mixture on top.
  • Bake in the preheated oven for 25-30 minutes or until the internal temperature reaches 145°F (63°C) for medium-rare or up to 160°F (71°C) for medium, using a meat thermometer to check doneness.
  • Once cooked, remove from the oven and let it rest for 5 minutes before slicing.
  • Slice the Bacon Brown Sugar Pork Tenderloin into medallions and serve hot.
